Pumpkin Power

Pumpkins aren’t just about jack o’ lanterns and hearty autumnal soups. Nope, in fact, the real power of the pumpkin lies in its seeds.

Pumpkin seed oil (tökmag­olaj in Hungarian) is produced by pressing roasted, hulled pumpkin seeds, and has been produced and used in Styria’s southern parts (that’s Austria) since the 18th century. The deep-colored oil, which has an intense nutty taste, is a veritable powerhouse of good stuff. It’s ideal used as a salad dressing, combined with honey or olive oil, and, trust us, it adds a great (albeit unusual) nutty twang to a bowl of vanilla ice cream.

Pumpkin seed oil doesn’t just taste great, though – it’s actually one of the healthiest oils out there. It’s rich in polyunsaturated fatty acids, as well as amino acids, steroidal compounds, and omega-3 and omega-6 fatty acids. As a result, it may help lower the risk of certain types of kidney stones and improve symptoms associated with enlarged prostates. It’s also packed with zinc, vitamins E, A, B1, B2, B6, C, D, E and K, as well as heaps of health-promoting minerals, including calcium and magnesium. The oil also contains over 60% unsaturated fatty acid and is rich in vegetable protein.

Approximately 2.5kg of pumpkin seeds are required to make one liter of pumpkin seed oil. Don’t be silly and start thinking about making your own, though; pick some up in a jar around town. Oh, and once you’ve got it home, be sure to store it in a cool, dark place.
