Taco? Burrito? Hola?

Being so far away from Mexico, and seeing as this isn’t exactly a widespread cuisine in Budapest, we’ve put together a little guide to Mexican food so you’ll look like an expert when you stop by Arriba for some fun and fresh comida. The Basics

Mexican food goes way beyond the basics you are likely to find in a taqueria, but for a quick bite there are a few items you’ll find on most menus.

Taco – A taco is a small tortilla, either soft or hard and traditionally made from corn, which is filled with meat and vegetables and then topped with various salsas and sour cream.

Burrito – Bigger than a taco, a burrito is a large (generally flour) tortilla stuffed with rice, beans, meat, vegetables and salsas, then rolled neatly in a self-containing, easily held shape.

Quesadilla – Quesadillas are made from a large tortilla filled with cheese and grilled to melt it. They tend to be folded in a flat, semi-circular shape and can have meat added inside and salsas and other garnishes on top.

The Meat of It

There are a few basic choices of meats you can build your dish on, whether it’s a burrito, taco, or even a hearty quesadilla. Beef and chicken are the staples of Mexican meats, while you’ll also come across chorizo (sausage) sometimes.

Carne Asada – A common option, this is thinly sliced beef that has been marinated and grilled

Machaca – Similar to beef jerky, machaca is prepared by marinating, cooking and then drying beef. It is then shredded.

Pollo – “Pollo” is Spanish for chicken. Often it is marinated and roasted before being cut into small pieces.

Fill it up and Top it Off!

Where things get exciting is with the fillings and toppings. Generally, rice, black or refried beans, cheese, lettuce, tomatoes and hot peppers (jalapeños – not your Hungarian paprika) are what fill out these tasty dishes. What goes inside depends on which type of dish you choose, but just about any combination of the above is possible.

When it comes to that final garnish, it’s the sauces that add the final flavor. If you choose a burrito, they’ll go inside, whereas with a taco or quesadilla they generally go on top.

Salsa – Meaning “sauce,” salsa is generally made of tomatoes, onions, spicy peppers and cilantro. Some are quite hot (especially the green ones) and others are mild with lots of chopped tomatoes.

Guacamole – The bright green color of guacamole comes from its main ingredient: avocado. Mashed with onions, salt and a bit of lime juice, this is a thick sauce also great for dipping chips into

Sour Cream – Most of us are familiar with this creamy white dairy product, and it lends a rich flavor to the cuisine.
