The venue’s menu was put together by executive chef Tamás Lipták and sous chef István Sziszik, whose duo has a shared professional past in the culinary arts that goes back to 15 years. Most of the dishes are prepared from top-quality Hungarian ingredients, yet are tailored to more international tastes, while the cocktail creations of Dominican mixologist George Valdez pay tribute to famous Hungarians, such as Ferenc Liszt, Ernő Rubik and Houdini.</p>

Helmed by chef Ákos Tasnádi, the same man who was responsible for Cupákos’ success, the kitchen of Dobka Bistro is a veritable melting pot of world cuisines, serving dishes like vegetable consommé with wakame and matzo balls, pearl barley risotto garnished with green peas and Lyon onions, and the knuckle of pork confited in beer, served with mashed potatoes and fermented vegetables.</p>

Frida is the latest addition to Pozsonyi út’s ever-growing list of coffee places, which stands out from the crowd with its spacious and cheerful interior and simply flawless pizzas, made in a wood-fired oven. Besides the Italian classic, you can quench your appetite with light sandwiches and hearty salads, as well as delicious cheese and cold cut platters.</p>

<p>If you have ever felt clueless during carb-related conversations, having no idea what this whole good carb/bad carb thing meant, don’t worry, we’ve been there too. Fortunately, differentiating them is not as hard as one might assume. Basically, carbs (one of three macronutrients) are a source of energy for the body that also act as a critical fuel for the brain and the heart. They help muscle preservation and promote digestive health too. In fact, according to healthline.com, dietary guidelines suggest that we get about half of our calories from carbohydrates (sugars, starches and fibres found in fruits, grains, veggies and milk products). However, the website also points out how controversial carbs are in the nutrition world.</p>
<h2>What is optimal?</h2>
<p>Over the years, carbs have gotten a bad reputation. Even if they play an important role in the human body, many believe that consuming fewer carbohydrates is the way to optimal health. Studies indicate that cutting carbs automatically reduces the appetite, as well as the calorie intake. There is scientific proof that having a low-carb diet could lower the blood sugar and insulin levels helping millions of people worldwide with diabetes and insulin resistance. What’s more, low-carb (and keto) diets have proven beneficial in treating brain disorders like epilepsy.</p>
<p>However, too little carbohydrate can be harmful, so it is important to be moderate. Also, what might work for someone doesn’t necessarily work for everybody. It is not a one-size-fits-all solution; the optimal carb intake depends on factors like age, gender, physical activity and metabolic health. The signs you aren’t eating enough (or not the right) carbs include exhaustion, immunity problems, weight loss issues, poor digestion, bad breath and moodiness.</p>

<h2>Good Carbs vs. Bad Carbs</h2>
<p>All in all, carbohydrates are not our enemy; all you have to do is make the right choices. This section will be very helpful for you in case you need practical advice on what the good and bad carbs are. Let’s start with the good ones: all vegetables are good carb sources so feel free to eat them every day. Whole fruits (apple, banana, strawberry, and so on) are likewise beneficial for the health, but keep in mind that some of them might have high sugar content. Make sure to incorporate legumes (lentil, kidney bean, peas), nuts (almond, walnut, peanut), seeds (chia seed, pumpkin seed), tubers (potatoes, sweet potatoes) and whole grains (oat, quinoa, brown rice) into your diet, while avoiding bad carbs like sugary drinks, fruit juices, white bread, white pasta, pastries and cookies, sweets, chocolate and French fries. They are low in minerals, do not provide lasting energy, and are also linked to weight gain and numerous serious health conditions.</p>

To clear the air, we’ll give you an introduction to our literally colourful gastronomy and tell you what should not be missing from your culinary bucket list when in Budapest.</strong></p>
<p>We, Hungarians have all heard stereotypes about our cuisine before, most of which are related to our “too generous” use of onion and garlic. As opposed to this unfortunate popular belief, our gastronomy is not a one-trick pony that can only operate on these two bulbous vegetables. Different types of meat, fresh vegetables, fruits, white bread, dairy products and honey are all inevitable parts of the Hungarian kitchen: we have countless veggie and fruit soups, creamy vegetable meals, hot pasta dishes (túrós csusza aka square pasta with curd cheese, sour cream and bacon crumbles is a must-try), and flavourful sauces and meat specialties made from poultry, beef, lamb, pork, fish and wild game.</p>

<p>Considering the wide array of spices that we use, it is technically impossible to have a dull cuisine. Just to mention a few: we add bay leaf (which has a flavour arsenal of more than 50 compounds) to potato sauce, bean and tomato soups and use cumin for cabbage dishes, sausages, sauces and baked pork meals. Tarragon is also our friend, perfect for seasoning poultry, wild game meat, salads, green bean and many more. Parsley is another ingredient that can’t be missing from any Hungarian household; it gives freshness to the chicken soup, and adds a special twist to sides like baked potato and Hungarian hash browns. Of course paprika (grind and fresh) is the apple of our eye, but it is not as dominant in our culinary palette as assumed. It is true though that the dishes we are most proud of, such as paprika chicken, stuffed cabbage, fisherman’s soup and goulash, happen to have this ingredient.</p>

<h2>Modern Hungarian Cuisine</h2>
<p>Just like most things in life, Hungarian gastronomy also had its ups and downs in the past. The ambassador of contemporary Hungarian cuisine and owner of Andrássy Food &amp; Wine Miklós Forrai shared his thoughts with us not long ago in an interview saying:</p>
<blockquote><p>“People around the world know that Hungarian gastronomy was very good in the past, and by saying this I refer to years before the turn of the century. If I could, I’d rather erase the 40 years prior to the regime change. Now people are open-minded and curious about what stage the Hungarian gastronomy is at right now. I must say, we are headed to the right direction.”</p></blockquote>
<p>With that being said, the biggest milestone of the last decade was when Costes became the country’s first Michelin-star restaurant in 2010. It brought with itself a wave of development influencing the whole fine-dining culture of the country as well as bistro kitchen and the local gastronomy in general. At the moment, Hungary has 6 Michelin-star restaurants: Costes, Onyx, Borkonyha, Costes Downtown, Stand and Babel.</p>

										<content:encoded><![CDATA[<p><strong>Looking out of the window from the elegantly lit-up interior in Robinson Restaurant Budapest during the winter months, you will see City Park Lake in a whole new light: with white mist of minute water droplets overhead. The lake house that glimmers in the midst of this mysterious scenery has been standing on the shore for more than thirty years now, representing timeless flavours under the leadership of restaurateur Árpád László.</strong></p>

<p>Both foreigners and locals like to frequent the restaurant to get immersed in the beautiful panorama overlooking the second biggest public park in Budapest, and most of the time they don’t even know that there is one thing that outshines the environment: the gastronomy of Robinson. Led by chef Dávid Kugyela, the devoted team of cooks is eager to provide guests with well-designed, perfectly made courses and a wide spectrum of flavours. In January we were invited to encounter the Robinson dining experience first-hand.</p>
<p>The chef put together two different menus for us so that we could have a more complex picture of the á la carte dishes everyone chooses from when there. Many say that starters are of great importance as they set the tone for the whole culinary journey: the courses we faced first established a pretty optimistic mood. First up, duck liver pâté came our way, a classic course of meal that is well-liked worldwide. On the side, golden beet marinated in a cider vinegar reduction sauce made with coriander and star anise, hazelnut crumbs and Turkish honey, mandarin jelly and homemade brioche harmonized perfectly with the melt in your mouth creamy pâté.</p>

<p>We were not even over this exciting fusion of tastes when another extraordinary starter arrived: ahi tuna steak with daikon and mango. A pure delight from Asia, it was topped with crispy daikon, which reminded me of glass noodles, toasted sesame seeds, lemon oil, coriander seeds and leaves, and sprinkled with a special Asian sauce made of soy sauce, cider vinegar, mirin and the seven-flavour Japanese spice mixture, shichimi togorashi. The flavour harmony was made complete with the freshness of the mangos served on the side.</p>

<p>We continued our gastronomic journey with venison steak, pumpkin puree with lemon oil, Brussels sprouts leaves with pine needle vinegar, sautéed red cabbage with cherry vinegar and herbs – it was exactly as lavish as you would expect.</p>

<p>I couldn’t imagine a more playful way of representing textures in gastronomy, but the ne plus ultra of all the magnificent meals we tried that day was yet to come: pork belly confit (with the crispiest crackling I have ever tasted) with fried French blood sausages, Savoy cabbage leaves filled with a mixture of white cabbage, onion, bacon and caraway seeds, and apple mustard, aka apple puree with sweet violet mustard, a combination of Dijon mustard and red grape must. The crispiness of the pork together with the flavour of the sausages much milder than the ones we eat in Hungary was a match made in heaven. Surprising as it is, the cabbage and the apple puree were not too distinguishing to steal the spotlight from the meats.</p>

<p>Finally, two light as a feather desserts arrived. One was more heavenly looking than the other: cherry-flavoured puree, sorbet and jelly were added to the chestnut tart complete with spicy whipped cream, whereas the airy chocolate mousse was sided with yogurt ice cream, passion fruit meringue, beet jelly with elderberry, and sponge cake. They were the happy ending to our first-hand dining experience at Robinson Restaurant Budapest as there’s no way we could have left more satisfied.</p>
